…and by you, I really mean me.
These pumpkin muffins have been a staple of my Fall diet since I was old enough to decide that I wanted to be Alice in Wonderland by day and a fairy princess by night for Halloween in kindergarten.
The best part? There are only TWO ingredients! (Unless you count water. Then fine, 3.)
Yes, you read that right.
Buckle up and get ready to make some friends at work because here’s the comically simple recipe.
Two Ingredient Pumpkin Mini Muffins
Makes about 30 mini muffins. Or 14 regular muffins.
Ingredients:
1 box spice cake mix
1 15 oz can pumpkin puree
1/2 cup water
Directions:
1. Preheat oven to 350 degrees.
2. Mix ingredients together in a medium bowl.
3. Scoop into well-sprayed mini muffin tray. (If using liners, spray those too!)
4. Bake 20-25 minutes or until toothpick comes out clean.
5. Here’s another step so this looks more complicated.
5. Cool in pan for 5 minutes and enjoy!

That’s it! That’s the whole enchilada. Or muffin, as it were.
